We FINALLY made it to game week! This football season we are going to give a weekly recommendation for your tailgate or watch party. Let’s get this kicked off with the Mizzou edition.
The start of football season represents a new beginning for all of us. 2020 has been a wild ride and it’s time to shake off this hangover with the “Hair of the Tiger” cocktail.
This one takes some work, so lets get going. First, you will need to make up some leche de tigre. This is a Peruvian seafood marinade but don’t let that scare you away!
The ingredients are as follows:
- 2 cups fresh lime juice
- 5 oz. firm white fish such as fluke, seabass, flounder, or sole
- 1 cup fish stock
- 1⁄2 large yellow onion, sliced (1 cup)
- 3 large garlic cloves, thinly sliced
- 2 celery ribs, coarsely chopped
- 2 tbsp. finely grated fresh peeled ginger
- 2 tsp. finely chopped cilantro stems
- 1 tsp. ají limo paste
- 2 1⁄2 tsp. kosher salt
Blend this all together and set aside.
Now onto the main event. Once you have your leche de tigre created, it’s time to make your cocktail.
In a shaker with ice, combine the following:
- 5 oz. leche de tigre
- 1 1⁄2 oz. tequila
- 1⁄2 tsp. fruity hot sauce, plus more for garnish
- Chile salt, for rim
- Celery shoots and fresh papaya, for garnish (optional)
Shake well and pour over ice. You might want to garnish with chile salt on the rim of your glass. Garnish with celery and get ready to take a bite out of the Tigers.
